Simply Cauliflower Mash

I decided to go here again. Why? Because this recipe is Simply that simple. If you’re trying to get your kids or grandkids to eat more vegi’s this is a great thing to start with. The last recipe I gave you (for cauliflower mashers) had more of an Atkins spin, with heavy cream and all. These are just so good no cream or extra butter needed! Get those florets started Cook them up Let the blending begin Nice and smooth Make the consistency yours, add less or more broth depending on your preference. Don’t forget that butter. Decadence in moderation, it’s a very good thing! Oh yum! Newmans’s ;) Spinach Salad

Happy to share this easy peasey yummy salad idea. Have left over hard boiled eggs? Have some fresh spinach to use up? Well then, you are just about good to go!  Salad for 2…  Here’s what you need Plus 1-2 hard boiled eggs (sliced) per salad bowl  It’s so darn good! Ingredients (makes 2 salad servings)  Fresh spinach, 4 cups  2 tablespoons (or so) Newman’s creamy cesear dressing Bacon bits, about 2 tablespoons   2-4 hard boiled eggs (sliced) per salad  Salt, pepper and garlic powder to taste Process Combine spinach, dressing and seasonings. Mix well.  Split between 2 bowls  Top with the egg slices and bacon bits  Enjoy!  Bon appetit!      g. 

Parmesan Chive Crusted Salmon

I’ve been craving salmon lately. Last time I was at the grocery store I decided to pick some up. I so wanted to make the salmon extra tasty (salmon is tasty on it’s own, but I wanted to do something special with it today) while still keeping it healthy. I searched the internet for ideas and came up with this… my very own take. I hope you’ll try it and let me know how you like it. Ingredients… 4 pieces of salmon 2 Tablespoons mayo 2 Tablespoons plain Greek yogurt 1/2 tsp soy sauce 1/8 tsp garlic powder 2 tablespoons grated Parmesan cheese Pepper to taste 2 Tablespoons chopped chives Process… Preheat oven to 450 Lightly oil a baking pan Rinse and pat dry the salmon, remove skin if you like Combine all other ingredients Top each Salmon piece with 1 tablespoon of the mixture Place the salmon pieces in the pan Bake for 10 – 12 minutes on the top shelf of your oven, this allows the top to brown a bit. Healthy Baked Chimichangas, oh my ya.

Above, I topped this one with some yummy goodness. To keep it all healthy I used non-fat plain greek yogurt instead of sour cream. My ground turkey mix Ready to roll, the chimichangas… His and hers, I chose a whole wheat tortilla today. Ingredients 1 pound ground lean turkey 1 small onion, finely chopped 1 clove garlic, minced 2 teaspoons chili powder 1 teaspoon dried oregano 1/2 teaspoon ground cumin 1 cup mild salsa, red or green 1 small can chopped mild green chiles (optional) 1 small can sliced black olives (optional) 1/3 cup cheddar cheese (I like using sharp cheddar as it packs more of a flavor punch)  flour tortillas (whole wheat if you’d like) Process Preheat oven to 400°F. Spray a nonstick baking sheet with nonstick spray. Spray a nonstick skillet with nonstick spray; set over medium-high heat. Add turkey, onion, garlic, chili powder, oregano and cumin. Cook and drain as needed until browned. Stir in salsa and chiles. Remove from heat and stir in the cheddar. Heat the tortillas. Spoon about 1/2 cup of the filling into the center …

Healthy Creamy Avocado Cilantro Lime Dressing 

Make this dressing asap, you will adore it!  It is both healthy and delish.  I like using healthy ingredients whenever I can. I’ve learned that plain Greek yogurt can be used at times to replace things like sour cream, cream, half and half, milk, etc… using yogurt here cuts down on the fat content ( I choose to use non-fat here) and another huge plus… yogurt is a probiotic,  good, good.  So here’s how to make it…  Gather your ingredients…  Toss all into a food processor or blender… Blend on high until smooth… Ingredients  2 avocados  1/2 cup loosely packed cilantro 1 cup nonfat plain Greek yogurt  1 Tbsp. chopped onion 2 (peeled) garlic gloves 1 Tbsp. lime juice  2 T. water  1/2 tsp. salt          Toss all ingredients into a food processor or blender  Blend on high until smooth Add additional water if needed Adjust seasonings to taste           * I have seen some recipes call for a bit of honey or sugar.
