A Fine Fried Rice w/Chicken 

Hey all, happy Sunday. It’s been a rather busy news weekend with all the whoop la about the new president, pro and against.  I’ve decided, I will just take it all in and enjoy the the never ending debate.  How else to take in a lovely rainy debatable 😉 day than to cook a fine meal.  Here’s my recipe for a delicious fried rice. I invite you to make it your own, sans meat, with pork or without, maybe ground turkey, add in more vegi’s to your taste, whatever you decide.  This is a great base recipe, may it inspire your own perfect take on fried rice.  I happened to have a few of Chinese take out containers. Vanilla Crepes w/Fresh Fruit Medley and Cream… (Whipped That Is) 

It’s my husband’s birthday 🎈, what better way to help him start his special day.  💙 A delish and special breakfast it is… I just made the batter ahead in order to let it rest, according to Alton Brown who’s recipe I tweaked a tad… this will keep the Crepes from tearing easily. Here I sit… giving at least one hour time for the bubbles in the batter to go down. This batter can be made ahead and kept in the refrigerator for up to 2 days, love that. Parmesan Chive Crusted Salmon

I’ve been craving salmon lately. Last time I was at the grocery store I decided to pick some up. I so wanted to make the salmon extra tasty (salmon is tasty on it’s own, but I wanted to do something special with it today) while still keeping it healthy. I searched the internet for ideas and came up with this… my very own take. I hope you’ll try it and let me know how you like it. Ingredients… 4 pieces of salmon 2 Tablespoons mayo 2 Tablespoons plain Greek yogurt 1/2 tsp soy sauce 1/8 tsp garlic powder 2 tablespoons grated Parmesan cheese Pepper to taste 2 Tablespoons chopped chives Process… Preheat oven to 450 Lightly oil a baking pan Rinse and pat dry the salmon, remove skin if you like Combine all other ingredients Top each Salmon piece with 1 tablespoon of the mixture Place the salmon pieces in the pan Bake for 10 – 12 minutes on the top shelf of your oven, this allows the top to brown a bit. Crockpot Smothered Pork Chops and Gravy 

Here’s an easy way to make delicious smothered pork chops  Ingredients…    8-10 small boneless pork steaks 2 cans cream of chicken soup 1 can cream of mushroom soup 2 envelopes pork gravy mix 2 cups water 1-2 tsps chicken boullion  1 tablespoon dried chopped onion 1/2 tsp garlic powder 1 tsp salt 1/4 tsp dried thyme 1/4 tsp onion powder 1/4 tsp pepper Process… Season the pork chops with salt and pepper Combine the rest of the ingredients right inside the crockpot. Make sure to whisk the mixture until smooth Add in the pork chops Cook on high in the crockpot for 4 hours Lower theheat and continue to cook for 3 hours on low Taste and adjust  * Normally I’d use fresh thin sliced white onion (1 whole onion) in this, but currently I’m living with a couple of none onion lovers so I got the onion flavor in on the down low with the dried onion and onion powder. Salmon and Rice Delight

30 minutes is all you need, in the time it takes to cook the rice you’ll have this yummy combo on the table. I think it’s high on presentation. Pair it with a nice vegi or great salad and you are good to go.  The salmon is seasoned with mayo (yes a scant (sorta) amount of it on one side) I’m not sure what the culinary haps are that take place once the salmon is cooked, but it’s like magic! The salmon ends up having a certain creaminess factor that is to die for. 🙂  Ingredients  Salmon Olive oil spray 1 tsp – 1 Tblsp mayo per salmon portion Garlic powder  Salt  Pepper  Cooked white rice  Heat a sauté pan to medium hot Spray pan with e.v. olive oil (regular olive oil can be used, add a few drops of it to your pan and coat the pan with a paper towel)  Spread each piece of salmon with desired amount of mayo Season with garlic powder and salt (you don’t need much, just a light …

 Avocado and Egg Salad 

The start of a really great thing! Healthy and delish…  Ingredients 1 avocado, cubed 2 hard boiled eggs, chopped 1 Tblsp minced onion 1/2 tsp dill, dried or fresh (optional)  1 tsp lime juice 2 Tblsp plain yogurt  Salt to taste  Combine all ingredients Chill if you like Enjoy This salad is really good with whole grain crispbread.  *certainly if you are not a fan of dill, it can be omitted. I happen to love the flavor in certain recipes, like this one.
