Crockpot White Chicken Chile

I know this recipe has to be excellente as written, but today I tweaked a few things. I used ingredients I had on hand. In the process I think my version is a tad lighter in calories. Maybe just a tad tho. 😉 Lol Oh well. Here’s the recipe as seen on Pinterest… My way is really good too. Okay, so I only changed… used one can black beans instead of 2 cans white beans. Instead of the cream cheese and half and half I used 1/4 cup heavy cream and 1/2 cup plain Greek yogurt. I adjusted the seasonings at the end, added a little garlic powder, a pinch extra dried oregano and a tad more salt. I cooked my soup a total of 3 1/2 hours. Condiments, a must… use store bought salad topping chips, chopped avocado, fresh chopped cilantro and chopped green onions.

Easy Creamy Ranch Crockpot Chicken with Vegetables

I was in the mood for comfort food, easy peasy comfort food! Serves 2-3 In a crockpot combine 2 boneless skinless chicken breasts with the following… 1 packet ranch dressing mix 1 can cream of chicken soup plus 1 full can of water 1/4 tsp garlic powder 1/4 tsp onion powder dash of pepper After one hour you’ll add in 2 cups frozen vegetables of your choice, defrosted Process… In a crockpot cook on high all ingredients except for the vegetables for 3 hours. At the 3 hour mark add in the defrosted vegetables, combine all well. Cook covered for one more hour. Shred the chicken to create bite size pieces. I did this in the crockpot, it was easy to pull apart the chicken using 2 forks. 4 hours total… to create this creamy goodness. Serve over mashed potatoes with biscuits on the side. Enjoy! Crockpot Smothered Pork Chops and Gravy 

Here’s an easy way to make delicious smothered pork chops  Ingredients…    8-10 small boneless pork steaks 2 cans cream of chicken soup 1 can cream of mushroom soup 2 envelopes pork gravy mix 2 cups water 1-2 tsps chicken boullion  1 tablespoon dried chopped onion 1/2 tsp garlic powder 1 tsp salt 1/4 tsp dried thyme 1/4 tsp onion powder 1/4 tsp pepper Process… Season the pork chops with salt and pepper Combine the rest of the ingredients right inside the crockpot. Make sure to whisk the mixture until smooth Add in the pork chops Cook on high in the crockpot for 4 hours Lower theheat and continue to cook for 3 hours on low Taste and adjust  * Normally I’d use fresh thin sliced white onion (1 whole onion) in this, but currently I’m living with a couple of none onion lovers so I got the onion flavor in on the down low with the dried onion and onion powder. Crockpot Roast Whole Chicken

Lunch! About 5 hours start to finish. I assure you totally worth the small effort in getting it started, asap! 😉 Rinse and pat dry your chicken Ball up 4 pieces of foil Place the foil balls spaced evenly on the bottom of the crockpot  Place 6 whole peeled garlic cloves in the chicken cavity  Season the chicken with.. 1 tsp. salt 1 tsp. dried thyme 1 tsp. lemon pepper 2 tsp. chile powder Place the chicken on the foil balls and cook on high in your crockpot for about 5 1/2 hours, depending on size of your chicken. I cooked a rather large one and it was perfectly done in 5 1/2 hours.  Enjoy! Happy weekend all. g. Served it up with a simple romaine and mushroom salad. 

Crockpot Pinto Beans

My mother made a big pot of beans for us just about every few days. In a family with 8 children you tend to get use to inexpensive (good tasting) staples like this. I have good memories of them cooking away on the stove, I can still recall a sense of warmth in our home as the scent of the almost cooked beans permeated our home. Now I enjoy cooking these beans for my own family. * To soak or not soak? My mom never did, so I don’t either, end of debate. Ha. 🙂 Ingredients 1 pound pinto beans, rinsed 12 cups beef broth 1/4 large onion, peeled and left in a chunk 2 slices of bacon, whole 1/2 sliced (in rings) jalapeño (these will only add flavor, not much heat at all) 1 tsp chile powder 2 garlic cloves, peeled and whole Process Place all ingredients in a large crockpot Turn crockpot to high Cover crockpot Cook on high for 4 to 4 1/2 hours, until beans are tender Turn off crockpot.
