Gina’s take… Cracker B’s Hash Brown Casserole

Gather your ingredients… Combine all well. It won’t look too smooth at this point. It’s important to mix the casserole throughly halfway through the baking process. Bake or refrigerate till morning Ingredients 1 30oz package hash browns, defrosted 1/2 cup salted butter, softened 1 cup sour cream 1 can cream of potato soup 8 ounce package grated cheddar blend cheese 1/2 tsp salt 1/4 tsp garlic powder 1/4 tsp onion powder 1/4 tsp pepper Pinch of dried thyme Process Preheat oven to 375 In a medium size casserole dish combine all ingredients Cover dish Bake casserole for 1 hour, mixing half way through Take the foil off at the 1 hour mark, bake another 20 minutes uncovered Take the casserole out of oven and be ready to throughly enjoy this delicious casserole! Mom’s Meat & Potatoes

My mom made this quite often as I was growing up. It’s an economical way to provide a delicious main dish. We’d usually have spanish rice on the side and pinto beans too or maybe a simple salad made of thin cut iceberg lettuce seasoned with salt and pepper and tossed with a bit of mayonnaise. Easy Tri Tip Roast w/Vegetables

This is such a easy way to prepare a tri tip and it makes for a very tasty meal. Today I am still under the weather a tad, been fighting a bad cold (or perhaps in hindsight it was influenza B) all week, so this put together and forget about it, way of cooking a tri tip… definitely works! 2 pounds tri tip 1 tablespoon cooking oil 1 envelope Lipton onion soup mix 1 can cream of mushroom soup 1 1/2 cups water 1 white onion peeled & quartered 1/4 tsp salt 1/8 tsp pepper 1/4 tsp garlic powder 4 russet potato, peeled and quartered 1 1/2 cups baby carrots 3 celery stalks, chopped into large pieces Process… Bring your meat to more room temperature by setting it out on your kitchen counter 20 minutes before you prep it Heat the oil to hot in a large sauté pan Brown the tri tip of both sides over high heat. Zoodles with Avocado Cream Sauce

This is a great dish to make if you are doing Keto or low carb, it’s super tasty and easy. Make your zoodles. There are contraptions you can buy on Amazon to do this. For the sauce… 3 avocados 1/4 cup cream 1/4 cup water 1/4 tsp lemon juice 1/4 tsp garlic powder 1/4 tsp salt Blend all until smooth Spiral your zucchini Salt and pepper the noodles Pan fry over medium heat in 1 tablespoon olive oil for just about 10 minutes Add amount of sauce to your specific desire/zoodles to sauce ratio. Easy Tex-Mex Ground Turkey Stuffed Peppers

Thanks to my daughter for reminding of the fact that these are yummy! I had not made them in decades. As a young mother and budding foodie I believe my first try took a lot of work (in my opinion) and the effort did not yield too much flavor. This version of stuffed peppers is full of flavor and could not be easier… Ingredients… 1 pound ground turkey 1 envelope taco seasoning 1 cup rice (cooked) 4 large bell peppers (any color), tops trimmed off and white and seeds inside of peppers removed Dash of pepper 1/8 tsp paprika 1/8 tsp salt 1/8 tsp garlic powder Process… Preheat oven to 350 Cook the ground turkey Add the taco seasoning and all other seasonings Combine the cooked turkey with white rice Stuff each pepper with the turkey and rice mixture Top each stuffed pepper with grated cheddar cheese Bake the peppers for 45 minutes Enjoy!

Green Chile Chicken Posole for the Win!

A soup made of green chile, broth, hominy, chicken and some delish mexican spices. I finally tried my hand at this soup. I’m glad I did, it came out very tasty! I hope you’ll give my version a try. I grew up enjoying the red chile posole my mother made, hers was so good. Over the years I’d heard of others eating the green chile version and I actually tried it myself once long ago, but found it to be a bit bland. After researching recipes on the web I came came up with this delicious version, enjoy! Onions translucent, salt added, garlic in and the chicken. All ingredients added now, bring to a boil, cover and simmer. After 30 minutes add in the can of chopped green chiles. Meanwhile, gather and chop your condiments and remember to always keep your condiment game strong! These tasty ingredients help take the posole to an over the top yummy status. I recently got together with my maternal Aunt, we swapped family history and recipe stories. She shared how her grandkids love a good Mollette. Naturally I had to ask, “what the heck is a mollette?.” This hungry girl had to know, ASAP. This is a dish my mom made quite often. It’s a meat and potato stew with green beans. I’ve spent years trying to get this recipe just so. I do believe I finally have. It’s so perfect on a cool evening. Ingredients… 1 pound ground turkey 1/2 a medium white onion, chopped 1 tablespoon olive oil 1 tsp salt divided 1/4 tsp pepper divided 1 large clove garlic, minced 2 medium tomatoes, chopped 6 cups beef broth 1/4 tsp oregano Pinch of comino (ground cumin) 4 potatoes, peeled and diced 1 can green beans, drained Process… Cook the ground turkey, season with 1/2 the salt salt and 1/2 the pepper, drain any fat, set aside In a stock pot heat oil to medium high Add in the onion, cook until translucent Add in the rest of the salt and pepper Add in the garlic, cook an additional 2/3 minutes, stirring often as to not burn the garlic Add in the chopped tomatoes cook another 5 minutes or so Next, add in the beef broth Add …

Lemon Pepper Chicken w/Orzo

Ingredients… 2-4 boneless skinless chicken breasts Cooking spray Lemon pepper for chicken 1 tsp olive oil 2 cloves minced garlic 3 cups chicken broth 1/4 tsp lemon pepper for broth Chopped curly pastsley for garnish Lemon wedges for service Process 1. Spray a skillet with cooking spray 2. Heat to medium high 3. Generously season chicken with lemon pepper, both sies 4. Cook the chicken per side 3-5 minutes 5. Take the chicken out of the skillet and set it aside 6. Add the tsp of olive oil to the pan 7. Add in the garlic, scrape up any chicken crumbs and combine them with the garlic 8. Cook the garlic for a few minutes mixing continuously so as not to burn it 9. Add in the chicken broth 10. Add in the 1/4 tsp lemon pepper 11. Add in the orzo 12. Combine all well 13. Not going to lie this was a huge hit at a recent family gathering my husband and I hosted. It’s over the top tasty with a touch of decadence. I hope you’ll try it! Cooking spray 30 oz bag hash browns defrosted 1/2 tsp salt divided 2 tablespoons butter (salted) 10 oz pork breakfast sausage 12 eggs, beaten 1 1/2 cups heavy cream 1 cup sharp cheddar 1/4 tsp minced fresh rosemary (optional) Process… 1.
