Lemon Pepper Chicken w/Orzo

Ingredients… 2-4 boneless skinless chicken breasts Cooking spray Lemon pepper for chicken 1 tsp olive oil 2 cloves minced garlic 3 cups chicken broth 1/4 tsp lemon pepper for broth Chopped curly pastsley for garnish Lemon wedges for service Process 1. Spray a skillet with cooking spray 2. Heat to medium high 3. Generously season chicken with lemon pepper, both sies 4. Cook the chicken per side 3-5 minutes 5. Take the chicken out of the skillet and set it aside 6. Add the tsp of olive oil to the pan 7. Add in the garlic, scrape up any chicken crumbs and combine them with the garlic 8. Cook the garlic for a few minutes mixing continuously so as not to burn it 9. Add in the chicken broth 10. Add in the 1/4 tsp lemon pepper 11. Add in the orzo 12. Combine all well 13. Layer in the chicken 14. Bring the mixture to a boil 15. Lower heat and simmer uncovered for 15-18 minutes or until the orzo is tender (al dente) …

Easy Creamy Ranch Crockpot Chicken with Vegetables

I was in the mood for comfort food, easy peasy comfort food! Serves 2-3 In a crockpot combine 2 boneless skinless chicken breasts with the following… 1 packet ranch dressing mix 1 can cream of chicken soup plus 1 full can of water 1/4 tsp garlic powder 1/4 tsp onion powder dash of pepper After one hour you’ll add in 2 cups frozen vegetables of your choice, defrosted Process… In a crockpot cook on high all ingredients except for the vegetables for 3 hours. At the 3 hour mark add in the defrosted vegetables, combine all well. Cook covered for one more hour. Shred the chicken to create bite size pieces. I did this in the crockpot, it was easy to pull apart the chicken using 2 forks. 4 hours total… to create this creamy goodness. Serve over mashed potatoes with biscuits on the side. Enjoy! Crockpot Chicken Cacciatore

Here’s the finished dish. I served it over spaghetti noodles, you could use any type of pasta here, regular or whole wheat of course. This really has a special depth of flavor, it is so very good. I think I will add this to my list of dishes, good enough to entertain with! Chop your onion small y’all :), just to be sure you end up with completely softened cooked onions in your finished dish. 4-6 cloves of garlic is perfect, I left them whole you can certainly chop them if you prefer. Fresh is best in my book, but dried herbs work just fine. I’m lucky in that in my neck of the woods (So. Cal.) rosemary bushes grow like crazy. Oven Baked Baked Lemon Pepper Chicken

I love a good bargain so when whole chickens go on sale, I usually buy a few. I had this guy in my freezer just waiting to be cooked up.  I’ve got this fresh thyme growing on my kitchen window, it’s doing great indoors during this cold spell. Some springs of this will add a yummy layer of flavor to the chicken.  Here’s that rosemary again, it never stops giving.  I love cooking, it relaxes me, for the most part. Here… a wee bit of cooking while enjoying a warm and cozy day inside. Using the oven on a cold day sure helps to heat the house up too, win, win.  The rosemary from my backyard herb garden area. Chicken and Mushroom Stroganoff w/Noodles 

Here’s a great recipe for Chicken and Mushroom Stroganoff, serve it over noodles if you like. The total cooking time is about 45 minutes, totally worth your time and effort, this recipe is a real keeper! Enjoy.  Yields 4 servings Ingredients  6 chicken tenderloins (or about 3 cups chicken breast) chopped Extra virgin olive oil or cooking spray 1/4 tsp garlic powder 1/4 tsp onion powder  1/4 tsp thyme 1/4 tsp salt 1/8 tsp paprika  1/8 tsp cayenne 1/8 pepper  Sliced Mushrooms, 8oz (I used button)  2 Tblsp white wine 4 Tblsp butter 4 Tblsp flour 2 cups chicken broth 1 Tblsp Worcestershire sauce  1/4 cup sour cream (a few good dollops more for service) 1/2 package 12oz wide egg noodles  Fresh parsley, finely chopped for garish  Meanwhile ;), I cooked half the package of wide egg noddles according to package directions, that yields about 4 good (under stroganoff) servings. Chicken and Rice (Arroz Con Pollo)

My mom use to make this for us when we were kids. I’m quite sure my version has changed over the years as I have traveled and tasted other versions of this dish and or similar dishes. I think this version I share with you here is a good one. I sure hope you enjoy it too!  First I chopped up my tomato, onion and garlic.
