Zoodles with Avocado Cream Sauce

This is a great dish to make if you are doing Keto or low carb, it’s super tasty and easy. Make your zoodles. There are contraptions you can buy on Amazon to do this. For the sauce… 3 avocados 1/4 cup cream 1/4 cup water 1/4 tsp lemon juice 1/4 tsp garlic powder 1/4 tsp salt Blend all until smooth Spiral your zucchini Salt and pepper the noodles Pan fry over medium heat in 1 tablespoon olive oil for just about 10 minutes Add amount of sauce to your specific desire/zoodles to sauce ratio. Top with parm cheese, enjoy! g.

Broccoli Casserole

I came across a similar recipe on facebook. After doing some recipe research I came up with my own version. This comes together quickly. Pop it in the oven and you’ll be free to tend to the rest of your meal prepping. Ingredients 4 cups fresh chopped broccoli 1 can cream of chicken soup 1/3 cup mayonnaise 1 egg, beaten 1/4 tsp salt 1/8 tsp pepper 1/4 cup monterey jack cheese, grated 1/4 cup cheddar cheese, grated 1/4 cup crushed croutons, I used a mixed type with both dark pumpernickel and light croutons. I crushed them myself. First I placed a few handfuls of croutons in a plastic ziplock bag, then I used the back of a stainless steal measuring cup to crush them. (primitive yes, but it worked) Process Preheat oven to 375 Combine the broccoli, cream of chicken soup, mayo, egg, salt and pepper. Mix well. Simply Cauliflower Mash

I decided to go here again. Why? Because this recipe is Simply that simple. If you’re trying to get your kids or grandkids to eat more vegi’s this is a great thing to start with. The last recipe I gave you (for cauliflower mashers) had more of an Atkins spin, with heavy cream and all. These are just so good no cream or extra butter needed! Get those florets started Cook them up Let the blending begin Nice and smooth Make the consistency yours, add less or more broth depending on your preference. Don’t forget that butter. Keto Squash and Peppers

I’ve been doing a modified Atkins thing lately just to drop some vacation pounds. With all the hoopla about the ‘Keto’ diet I decided to call this dish… Keto Squash and Peppers w/Cheese.  I love to enjoy this kinda soupy but feel free to cut down on the chicken stock by a cup or so to make it more of a side dish and less of a soup.  Before moving on I thought I’d share some of my personal history with this dish, my mother made a version of this for years, her famous ‘Calabacitas’. Her version was always so very delicious. One evening while I was in culinary school in the South of France I made my mom’s calabacitas for some of my fellow chefs in training, talk about a hit! War Ton Soup, Sans Wontons 

My momma in law made this delicious version of War Ton soup. We topped our soup with Chinese crunchy noodles and siracha sauce. What a great meal it was. Eggplant Fries w/or without Truffle Salt 

These are just too good not to make, easy too.  Gather your ingredients Slice the eggplant like this Cut into fry shape  Drizzle with olive oil, salt and pepper them Experiment with your seasoning choice, or not. I added a sprinkle of truffle salt I had on hand instead of plain salt to one portion.  Present your dish!  Addictingly yummy  Uh huh, so good. Today I enjoyed my eggplant fries with a side of Harry Potter. 😉  Ingredients… eggplant, sliced then cut into fries olive oil olive oil spray (optional) salt, pepper truffle salt or not mayo, flavored or not Process…. preheat oven to 400 place eggplant fries on an oiled cookie sheet, I used an olive oil spray drizzle the fries with olive oil, I used a tablespoon per 1/2 amount of eggplant fries and cookie sheet salt and pepper the fries *or sprinkle with pepper and truffle salt (or use your seasoning choice, with plain salt and pepper. Chop Suey with Chicken

Ingredients… 1 whole head bok choy, chopped (don’t use the very end stem pieces) 1/4 onion, thinly sliced 1/2 cup chopped celery  1/2 cup of beans sprouts 3/4 cup warm water 2 tablespoons flour 2 tablespoons soy sauce  1/2 tsp salt 1/2 tsp garlic powder 1/4 tsp ginger (I used powdered)  1 cup cooked chopped chicken  Process… Heat oil in a large sauté pan or stock pot to medium high heat Cook the onion until translucent  Add in the bok choy and celery continue cooking on medium high for about 10 more minutes Add in the bean sprouts Add in the soy sauce and seasonings, stir  In a bowl combine the flour warm and the warm water, stir until smooth Add the liquid to the vegi mix Bring to a boil, simmer for about 10 minutes  Add in the chopped chicken, stir  Taste and adjust seasonings to your taste When chicken is heated through it’s done.  Serve over hot rice, oriental noodles, or Shirataki noodles Top with crunchy Chinese noodles  Add a bit of siracha …

Shirataki Noodles and Chicken Chop Suey

So I heard about these noodle some time ago. I just happen to see them at my local grocery store recently and thought… hey, now’s my chance to try these no carb tofu noodles. I decided to make some of my yummy Chicken Chop Suey (stay tuned for that recipe) to top these noodles with. The store I was at only had the fettuccine type cut of Shirataki noodles, it did the job. I was definitely not disappointed here, the texture of Shirataki noddles is different, of course. They are a little on the chewy side, but not bad.  Also, I had to get past the fact that they have a not so pleasant odor when you open the bag. No worries there, just rinse them very well, pat them dry with a paper towel (and the odor dissapears), then quick cook them per package directions. I cooked mine in the microwave for 1 minute. I made white rice for my family members, as I am the only one counting carbs (or lack there of …

Cauliflower Mashers 

I had some cauliflower to use up so I decided to make cauliflower mash. This makes a great substitute for mashed potatoes, it is so yummy, you will hardly miss the potatoes. Depending on the size of the cauliflower head you are using, this recipe will serve approximately 3-6 people as a side dish.  Ingredient gathering, quick cooking the fresh garlic now… All chopped up.  Salting the water…  I also added garlic powder for an extra flavor punch. Into the boiling water the florets go  10 minutes on high, and walla they are done  Add the cauliflower to your blending/chopping/mixing vessel. Use a bowl if you like. The cauliflower is so soft after the cooking process it is possible to mash it with a fork or hand held masher.  Use a blender, cuisinart or a hand held masher to mash up the cauliflower  And there you go,  Oh my, so good.  Served it up today as my side dish. I  topped the mash with grated sharp cheddar cheese and green onion.  These yummy cauliflower mashers …
