Cucumber, Avocado, Tomato and Corn Salad

I love this salad, it’s so refreshing. It makes a great side dish or you can eat it alone with crackers or even in a warm corn tortilla. Ingredients 1 large cucumber, peeled and diced 1/2 avocado, peeled and diced 1 to 2 tomatoes, diced 1/2 cup whole kernel corn, drained 1/8 red onion, sliced thinly 1/4 tsp salt 1/4 tsp garlic powder Juice from 1 lemon Pinch of oregano Process Combine all ingredients Test for seasoning Chill Serve This is great made ahead and chilled. If you’re going this route don’t add the avocado until ready to serve.

Newmans’s ;) Spinach Salad

Happy to share this easy peasey yummy salad idea. Have left over hard boiled eggs? Have some fresh spinach to use up? Well then, you are just about good to go!  Salad for 2…  Here’s what you need Plus 1-2 hard boiled eggs (sliced) per salad bowl  It’s so darn good! Ingredients (makes 2 salad servings)  Fresh spinach, 4 cups  2 tablespoons (or so) Newman’s creamy cesear dressing Bacon bits, about 2 tablespoons   2-4 hard boiled eggs (sliced) per salad  Salt, pepper and garlic powder to taste Process Combine spinach, dressing and seasonings. Mix well.  Split between 2 bowls  Top with the egg slices and bacon bits  Enjoy!  Bon appetit!      g. 

A Fine Fruit Salad 

I grew up eating this most delicious stuff around the holidays. It’s funny my mom and sisters have made it for family gatherings for years, but I kinda over time lost my love for it. Recently my mom passed away and all of a sudden I’ve been craving it like crazy. I guess food memories can be like that, you miss what you don’t have. You want back the yummy good stuff and the people in your life that created it.   Missing you Mom… ❤️ Here are the ingredients, I made a few adjustments (to the original recipe) according to my taste buds.  Don’t forget the pineapple tidbits! (not pictured here)  Here’s what it looks like done. Chill the salad for a few hours at least or better yet overnight.  Ingredients 1 large bag (20oz) mini marshmallows  2 large (30oz) cans fruit cocktail in heavy syrup, drained 1/2 a large bag (14oz) of coconut 1 can (20oz) pineapple tidbits, drained 8 oz sour cream  1/4 cup chopped walnuts 1/2 tsp vanilla 1/4 tsp cinnamon  …

Tantalizing Tangy Potato Salad 

This about sums it up. (with the addition of a few other ingredients)  Simple ingredients yes, these I just happened to have on hand. I’d been craving something tangy for days, so naturally I went for the cocktail onions and pickles too when creating this recipe, this combo made for some very tantalizing goodness.  This comes together so quickly and it’s so delicious.  I cooked the potatoes and eggs in the same pot and water. The potatoes took about 30/40 minutes. (cooked whole, skins on)  I added the eggs in toward the end and cooked them for about 11/15 minutes in the rapidly simmering water I served my potato salad with a side of BBQ ribs, yum… bunny… yum!  Ingredients… 10 cooked red potatoes (skin on), chopped large  3 Tablespoons pimiento, chopped 2 hard boiled eggs, peeled and chopped  1 celery stalk, chopped 6-8 cocktail onions, minced 2 pickle spears, chopped 1 tsp salt 1/4 tsp garlic powder 1/4 tsp season salt  1/2 cup mayonnaise  Process… Combine all ingredients  Chill the salad for at least …

Simple and Semi-Homemade Chicken Cesaer Salad 

A long healthy hike calls for a nice healthy lunch.  I did it, made it to the top!    This salad is both simple and delish. I just happened to have some chicken tenders to cook up,  Chicken Cesear Salad… that definitely worked.  Ingredients… One bag of Cesaer salad mix Cooked sliced chicken. I used 5 small chicken tender pieces per my 1 bag of salad (season the chicken as you like, I used s&p and garlic powder)  Salt, pepper and garlic powder to taste for the salad mix Combine all ingredients  Enjoy Plan your next hike!  *currently I am counting carbs, so I skipped the croutons, normally… those lil crunchy morsels are yummy touch in my book. Broccoli Salad 

It’s 9:40 am here in sunny San Diego.  In my world, it’s never too early to plan lunch and chill it.  Beginning to gather my ingredients… I had some giant mushrooms to use up, the mushrooms definitely work here.  I like using ingredients (if they blend well) I have on hand, it’s less waste and economical.  Even though I’m doing low carb and this red onion is not on my ‘ok’ list, I figure a tablespoon can’t hurt. I like the little crunch it gives the salad.  I took some tips from my favorite culinary book, “what else goes well with Brocolli you ask? “, parm cheese and  garlic, well ok then…  Here is my recipe for low carb Broccoli salad.  Ingredients…  4 cups chopped Broccoli  1 cup chopped mushrooms 2 slices chopped cooked bacon 1 Tablespoon minced red onion 1/2 tsp salt 1/8 tsp garlic powder 1/8 tsp dried thyme Dash of pepper  2 packed tablespoons grated parmessan cheese  1/2 cup mayonnaise  Process…  Combine all ingredients.   Chill for at least an hour.  Enjoy.      …

 Avocado and Egg Salad 

The start of a really great thing! Healthy and delish…  Ingredients 1 avocado, cubed 2 hard boiled eggs, chopped 1 Tblsp minced onion 1/2 tsp dill, dried or fresh (optional)  1 tsp lime juice 2 Tblsp plain yogurt  Salt to taste  Combine all ingredients Chill if you like Enjoy This salad is really good with whole grain crispbread.  *certainly if you are not a fan of dill, it can be omitted. I happen to love the flavor in certain recipes, like this one.
