Mexican Posole w/Pork

3 – 31/2 pounds pork butt, marbled with fat, chopped into small cubes 3 tablespoons cooking oil 6 cloves garlic, minced 1 tsp salt 2 tsp crushed oregano 1/2 tsp cumin powder 1/4 tsp pepper 1 tsp garlic powder 3 bay leaves 10 cups beef broth 1 can (28oz) enchilada sauce, Las Palmas 1 1/2 cans (28oz) red chile sauce, Las Palmas 2 tablespoons chile powder 1 large can white hominy 2 cups hominy liquid

Morsels of delicious, somewhat crispy, pork going on here… These are so yummy and easy to make. I used country style pork ribs (very little bone), about 3/4 pounds. Layer ingredients Bake Finished product, well almost Pan fry or toss to crisp up a bit. I used very little oil, just some olive oil cooking spray in this non-stick pan. Finished goodness. Stove Top Smoothered Pork Chops and Braised Onions

Years ago I was watching this show or that one, really I can’t recall which one, but that’s not too important here because what I do remember…. is the amazing recipe shared that day!  Thanks to the Southern Chef for sharing this major pot of goodness on that fateful day.  This has to be one of my most favorite comfort meals, it is so darn delish. I hope you’ll give it a try.  You are only browning the chops here  Set them aside You want to cook off the flour flavor here, so don’t rush this step. Cook the flour & butter mixture until thickened and good and hot.  And there it is, perfection on a plate. This Mexican soup has always been a tradition in my family, especially around the holidays. I’m making it for Christmas Day here in Kentucky, for my family. I have great memories of my mother making this soup year after year. Since she recently passed, this year… her delicious and warm family favorite has even more precious meaning. My mom was such a great cook, never measuring, just always knowing. Even later in life, I marveled at her skills. I guess I learnt from the best. To you Momma, may my version here make you proud. I sure do love you and miss you. I look forward to seeing you again in paradise. Here’s the hominy I like to use, I add in a little of the juice too. It makes the soup nice and thick.  The yummy toppings  ✔️, they help send this soup over the delicious top. Grandson’s excited. And here we go, oh my yum. Crockpot Smothered Pork Chops and Gravy 

Here’s an easy way to make delicious smothered pork chops  Ingredients…    8-10 small boneless pork steaks 2 cans cream of chicken soup 1 can cream of mushroom soup 2 envelopes pork gravy mix 2 cups water 1-2 tsps chicken boullion  1 tablespoon dried chopped onion 1/2 tsp garlic powder 1 tsp salt 1/4 tsp dried thyme 1/4 tsp onion powder 1/4 tsp pepper Process… Season the pork chops with salt and pepper Combine the rest of the ingredients right inside the crockpot. Make sure to whisk the mixture until smooth Add in the pork chops Cook on high in the crockpot for 4 hours Lower theheat and continue to cook for 3 hours on low Taste and adjust  * Normally I’d use fresh thin sliced white onion (1 whole onion) in this, but currently I’m living with a couple of none onion lovers so I got the onion flavor in on the down low with the dried onion and onion powder. Herb Crusted Baked Pork Chops 

I give you my Herb Crusted Baked Pork Chops. They make a great presentation, perhaps you’d like to entertain with these as the main dish. This dish is to easy to come together not to try. Rosemary grows wonderfully in my back yard, so rosemery  it is… My parsley plant will provide the 2nd herb delight in this dish I like to mise en place (just French for gather your ingredients/have everything in place) 1st. Missing here is the Rosemary, opps. I used a bit of Chinese hot mustard in addition to regular mustard as opposed to heading to the market just for spicy mustard. You don’t need to go out and buy the Chinese hot mustard, this my dear mother in law just happened to have on hand and it worked. (Oh yes, we are living family style (ha) in laws and sis in laws as well in our home here in So. Cal. for a few months. We are all in a transitioning period. Sweet Carolina Rubbed Baked Pork Spareribs, Low and Slow

Rub 4 Tablespoons brown sugar 1/4 cup paprika 1 Tablespoon cumin 3 Tablespoons chile powder 2 Tablespoons black pepper 2 Tablespoons garlic powder  2 Tablespoons onion powder  (the salt comes in later)  Process Combine well all rub ingredients. Store extra rub in an air tight container for later use, you’ll use only about 2/4 tablespoons here. Ribs 5 pounds pork spareribs (for me this was one slab cut in half) dry rub, about a 1/2 tsp per side, per 1/2 slab piece (no worries you’ll have plenty with the recipe above)  Process Preheat oven to 250 Rub the ribs with the dry rub, both sides. I went liberal here, you may want to use a little less.  3. Take 2 fairly long sheets of foil (per slab piece) place the ribs meat side up on the foil and create a tight wrap around the ribs  4. War Ton Soup, Sans Wontons 

My momma in law made this delicious version of War Ton soup. We topped our soup with Chinese crunchy noodles and siracha sauce. What a great meal it was. Pork Steaks and Eggs Over San Diego

Hey all, just thought I’d share this easy peasy (on the hearty-side) breakfast idea.  Pork Steaks and Eggs Over San Diego  On my once a month grocery list I had pork chops on the list. What I found to be the best buy was a package of assorted cuts. All good. In the past I have pan fried the chops, the more thin yet still quite meaty steak like pieces I usually save for recipes that include cooked chopped pork.   Today I’m using a thin cut steak-like bone in cut to pan fry for breakfast, boy they are filling our little loft with a great aroma.  Pork steak  Salt, pepper and garlic powder Olive oil spray or an oil of your choice to coat your pan Eggs over easy  Begin to heat your skillet to hot Season the pork steaks (both sides) liberally with salt, pepper and garlic powder.
