Animal Style Grilled Cheese 

Don’t have an In n Out in your town? Want that delicious flavor that comes with the sauce? Try this recipe, you will not be disappointed. Some days I wake up just… hungry. As I was killing time as to not wake up any of our housemates (i.e., family staying with us) by getting up too early… I got to looking at current news articles on my iphone, which naturally (for me ;)) led to this great food article by The Food Network.  By the way, another article  I came across this morning was the news about the recent earthquake in Italy. I can somewhat (native California gal here) imagine the scare and stress people must be experiencing, you’ll be in my prayers Italian friends! Eggs Over Tomate

Sometimes you just need a pretty breakfast… I give you my Eggs Over Tomate While my husby was busy planting new Rosemary plants in our backyard, I was busy planning our breakfast.  There is nothing like fresh herbs when available. Remove the woody stuff Chop, chop away…  Here’s the Tomate Sauce, almost finished.  I add a pinch of sweetner to my Tomate Sauce, I find that it takes the tangy edge off.  That’s Sunday breakfast here in So. Cal.  Ingredients  1 small can of tomato sauce 1/2 cup water 1/4 tsp dry oregano 1/8 tsp garlic powder 1/8 tsp onion powder 1/4 tsp salt 1/2 tsp fresh minced rosemary (chop a little extra for garnish) Pinch of sweetner Eggs Bread Process Heat a med size sauté pan to medium low heat.  Add in all the sauce ingredients. (not eggs or bread) Bring the sauce to a high simmer Lower the heat and low simmer the sauce for 10 to 15 minutes.  Next, carefully crack 2-4 eggs on top of the simmering sauce Cover and continue …

Nopales & Chorizo w/a Poached Egg

Nopales are cactus here I used cooked cactus. I like using  Nopales strips in a jar. They can found in grocery stores on the ethic found isle, in the Hispanic section.  For some of you this dish might seem like a very odd and foreign thing. I assure you, if you’re looking to expand your taste horizons and ‘tried foods’ repertoire, this dish is worth your time. As a child I was not too keen on the Nopales my mother prepared for us, but since her passing it’s been something I crave…  For you Momma. ❤️ Nopales… I poached an egg here, you can use any type of cooked egg you like.  Start with the sauce, or salsa. You’ll find that this sauce can stand on it’s own (in a bowl that is) as a table salsa. Fetticine Alfredo w/Chicken or without, The Only Sauce Recipe You’ll Ever Need. 

Here are the ingredients I used.  This sauce is the best, you’ll find it hard to make and use any other once you’ve made this… no kidding, it’s that good!  I like serving it up like this, that way your guests or family members can choose just how much sauce and chicken to add to their fettuccine noodles.      Oh my yummy.  I cooked up some chicken tenderloins to chop up and add to the fettuccine Season the chicken pieces lightly with salt and pepper. Cook the tenderloins about 8-10 minutes per side. Chop the chicken into bite size piece and set it aside till service.  Ingredients  1/2 cup good quality salted butter 1 Tablespoon olive oil 3 garlic cloves, minced 2 cups heavy cream 2 1/2 cups good quality parmessan cheese, grated (use the block type don’t use the grated for you type, it does not blend well and your sauce will separate)  a pinch of ground nutmeg  Flat or curly leaf parsley for garnish 2/3 chicken tenderloins pieces per guest (optional)  16 …

Some lazy Saturdays bird watching and bratwurst are a good match, add a little kraut and all things are good!  Birdwatching in your area? I do, why not. I try to find beauty where I’m at. It makes life that much more grand. Shrimp Cocktail, Downtown Vegas Style 

My husband and I have been going to Vegas (downtown) for his side family reunion every year for awhile now. Early on one could belly up to the old cafe in the Golden Gate Casino and enjoy this type of delicious shrimp cocktail for a very reasonable price, and we did, on every trip. Some years back the casino remodeled, got rid of the cafe and replaced it with a nicer coffee shop. All okay and dandy, but (insert sad face) there went the true experience of this famous Golden Gate Casino treat. Last night as some of his family members were arriving into Vegas to enjoy the yearly get together , we decided to make these at home. While we are disappointed about having to miss out on the big family trip this year due to schedule conflicts, we are very happy for all going.
