Baked Cauliflower with Cheddar Cheese Casserole

Okay, so, I am in food love with this side dish. It is so very tasty. I hope you like it too.  I give you my… Baked Cauliflower with Cheddar Cheese Casserole  Time to add in the cauliflower.  My finish product is a little loose, remember I am cutting carbs this week. For a thicker finished casserole don’t forget to add in 2 tablespoons of flour, as opposed to 1.  Enjoy this flavorful side dish, it is low carb and Atkins friendly…  Ingredients… 1 (3-pound) head cauliflower, cut into small florets Salt and olive oil for cooking cauliflower 2 tablespoons butter 1 tablespoons flour (add 2 Tablespoons for a thicker sauce, I was trying to keep the overall carb count down)  1 cup heavy cream  1/4 tsp garlic powers 3/4 tsp salt Dash of pepper 4 Tablspoons sour cream 8 ounces shredded Sharp Cheddar cheese A bit of parmessan cheese (optional) Instructions… Preheat oven to 400 degrees. Cloud Bread Seems Fitting… 

My cloud bread chicken and cheese sandwhich.  Tried my hand at this low carb treat.  Yummy little morsels of Cloud Bread goodness.  Used this recipe with slight variations… http://thebigapplemama.com/2016/04/garlic-cloud-bread.html I added 1/4 tsp. garlic powder and a 1/4 tsp Italian dressing. Highly recommend the egg white tips up there. Check that out, nice and fluffy egg whites there. I’m pleased.  After the egg yolk fold in, careful not to mix too hard… just fold them in gently, until incorporated.  Ready to bake…  In they go, baking away now.  The finished product. 🙂  Eating a tasty cloud bread cheese sandwhich now. Shrimp Cocktail, Downtown Vegas Style 

My husband and I have been going to Vegas (downtown) for his side family reunion every year for awhile now. Early on one could belly up to the old cafe in the Golden Gate Casino and enjoy this type of delicious shrimp cocktail for a very reasonable price, and we did, on every trip. Some years back the casino remodeled, got rid of the cafe and replaced it with a nicer coffee shop. All okay and dandy, but (insert sad face) there went the true experience of this famous Golden Gate Casino treat. Last night as some of his family members were arriving into Vegas to enjoy the yearly get together , we decided to make these at home. While we are disappointed about having to miss out on the big family trip this year due to schedule conflicts, we are very happy for all going.
