Mussels in a Tomato Cream Sauce

One of my favorite treats, Mussels In Tomato Cream Sauce! This is actually a light cream sauce, really. I just used a 1/4 cup of heavy cream. Bring those onions to the translucent state. 😉 Add in the salt, dried thyme and garlic. Next, add 1/4 cup white wine (I used a descent Chardonnay), cook mixture down until all the alcohol is absorbed. You’ll know when that happens as the liquid will disappear. Next add in the broth and canned diced tomatoes with juices Add in the mussels and don’t forget the dried parsley Next, stir in the cream And walla! Add some toasted bread for delish dipping. My bowl started to empty quick like. Oh yes, delish! Salmon W/Dill 

I recently started growing a few more herbs in containers. So far they are doing great! Here’s my new dill plant I have going… Isn’t she lovely?. Though I used dried dill in the process I will be garnishing the finished salmon with fresh dill. This will add a wonderful and fresh flavor pop.  I found this recipe on All Recipes and tweaked it to my liking.  A few simple ingredients made for some fab tasting super moist salmon. Shrimp Cocktail, Downtown Vegas Style 

My husband and I have been going to Vegas (downtown) for his side family reunion every year for awhile now. Early on one could belly up to the old cafe in the Golden Gate Casino and enjoy this type of delicious shrimp cocktail for a very reasonable price, and we did, on every trip. Some years back the casino remodeled, got rid of the cafe and replaced it with a nicer coffee shop. All okay and dandy, but (insert sad face) there went the true experience of this famous Golden Gate Casino treat. Last night as some of his family members were arriving into Vegas to enjoy the yearly get together , we decided to make these at home. While we are disappointed about having to miss out on the big family trip this year due to schedule conflicts, we are very happy for all going.
