BBQ Ginger (Ale) Whole Chicken In The Crockpot 

Here’s what you need 1 whole chicken, rinsed and patted dry Half an onion, sliced 1 cup ginger ale  4 cloves garlic, peeled left whole  1 spring of fresh rosemary, or a tsp dried rosemary  1 1/2 tsp salt divided  1/8 tsp pepper  1 tsp ground paprika (not pictured)  2 cups of your fav bbq sauce  Slice up half an onion and layer your crockpot with the slices.  Stuff your chicken with the 4 garlic cloves (peeled and whole), the rosemary spring and 1 teaspoon of salt.  Place the chicken in the crockpot. Sprinkle the outside of the chicken with remaining 1/2 teaspoon salt, 1 teaspoon of paprika and 1/8 tsp of pepper. Now pour 1 cup of your favorite ginger ale (not diet) around the chicken.  Next, pour 2 cups of your favorite BBQ sauce on top of the chicken. Cook on low in a crockpot for 8 – 8 1/2 hours. Crockpot Verdi Chicken

Oh this makes for a so delish burrito or taco filling! You must give it a whirl.  It is really easy and quick to come together… turn on the crockpot and go about your day.  At the end of 6 hours you’ll have a most delish chicken filling. If your doing low carb, this would surely be good on it’s on, sans tortilla.  Ingredients 3 boneless skinless chicken breasts 1/2 a medium size white onion, sliced  1/2 cup crushed tomatoes  2 cups salsa verdi (green salsa, I used Herdez, mild)  1/4 tsp garlic powder 1/4 tsp crushed oregano  1/4 tsp salt  Dash of pepper  Process Layer the bottom of your crockpot with the onion slices, next add in the chicken and all other ingredients.  Cover and cook on low for 6 hours Once done, shred the chicken with a fork, mix the chicken and salsa well.  Make your salsa verdi burritos or tacos  Enjoy!  I made burritos this time, I added shredded cheese, hot sauce and a bit of sour cream. Crockpot Guinness Corned Beef and Cabbage 

Ladies and Lads, its not too late late to celebrate St. Paddy’s day with a traditional Irish meal…. now I’m not quite sure how traditional it is to add Guinness to the mix, but it is a delish way to go! Enlist the help of some good Irish/Celtic tunes to set the mood. Loving this… Okay, on to more about the good eats, (at serving time) So this year I decided to cook a Point Cut, why you might ask… rumor is that the point cut has more flavor because it has more fat. There are different schools of thought on what cut to buy, this year I’m happy I went with the Point Cut, the corned beef turned out excellent, so very tasty, moist and extra tender. Start here Layer your crockpot with onions then potatoes, add pepper. Hour 7, almost done. Process… Place the corn beef on top of the onions and potatoes, add the seasonings (bag) in. Crockpot Roast Whole Chicken

Lunch! About 5 hours start to finish. I assure you totally worth the small effort in getting it started, asap! 😉 Rinse and pat dry your chicken Ball up 4 pieces of foil Place the foil balls spaced evenly on the bottom of the crockpot  Place 6 whole peeled garlic cloves in the chicken cavity  Season the chicken with.. 1 tsp. salt 1 tsp. dried thyme 1 tsp. lemon pepper 2 tsp. chile powder Place the chicken on the foil balls and cook on high in your crockpot for about 5 1/2 hours, depending on size of your chicken. I cooked a rather large one and it was perfectly done in 5 1/2 hours.  Enjoy! Happy weekend all. g. Served it up with a simple romaine and mushroom salad.
