Easy Tex-Mex Ground Turkey Stuffed Peppers

Thanks to my daughter for reminding of the fact that these are yummy! I had not made them in decades. As a young mother and budding foodie I believe my first try took a lot of work (in my opinion) and the effort did not yield too much flavor.

This version of stuffed peppers is full of flavor and could not be easier…

  • 1 pound ground turkey
  • 1 envelope taco seasoning
  • 1 cup rice (cooked)
  • 4 large bell peppers (any color), tops trimmed off and white and seeds inside of peppers removed
  • Dash of pepper
  • 1/8 tsp paprika
  • 1/8 tsp salt
  • 1/8 tsp garlic powder

  1. Preheat oven to 350
  2. Cook the ground turkey
  3. Add the taco seasoning and all other seasonings
  4. Combine the cooked turkey with white rice
  5. Stuff each pepper with the turkey and rice mixture
  6. Top each stuffed pepper with grated cheddar cheese
  7. Bake the peppers for 45 minutes

Hi, thanks for stopping bye. I have so many passions, not quite sure (ever,) where to start. I hope you find posts here on my blog that are interesting to you. I have a culinary background, having spent time studying in Hollywood Ca. and in the South of France. I am also a passionate amateur photographer. Lately I've been trying my hand at the written word as well. Enjoy.
