Easy Peasey Chicken and Rice Soup 

Mmmm, who doesn’t like a yummy  chicken soup. Here I’m making it easy peasey, but you can bet it will still be over the top flavorful. I am using leftover frozen then thawed white rice to both simplify things and to use up ingredients  I have on hand. Ha! I was expecting rain, but got this instead, sunny with more chance of sunny. All good, any weather is good soup weather! Highs in the low 60’s here in Riverside County, California, sunny and bright today, I shall take it, and this yummy soup. I sure hope you’ll give this recipe a whirl, it’s sooo very tasty. I think you’ll like it friends.  Great product here, so good in soups. Kentucky Exploring, Morgan Conservation Park 

This park is located in La Grange Kentucky, it is a definite must explore. There are a number of trails with enough off shoots to keep you on your toes. Wear a good pair of boots or tennis shoes, you’ll need good traction in some spots. Have your phone charged up for safety purposes and to take plenty of photos too, or better yet, for photos bring your favorite camera as there are great photo opportunities around every bend.  Hmmm, where to start Not much water this time of year, just a trickle… Ok we’ve passed this sign one too many times ;/  On the right track again  Time for my yoga challenge pose. Sometimes you can find me on Instagram yoga-ing away… Husby paving the way back to our vehicle.  Such a great hike. Tantalizing Tangy Potato Salad 

This about sums it up. (with the addition of a few other ingredients)  Simple ingredients yes, these I just happened to have on hand. I’d been craving something tangy for days, so naturally I went for the cocktail onions and pickles too when creating this recipe, this combo made for some very tantalizing goodness.  This comes together so quickly and it’s so delicious.  I cooked the potatoes and eggs in the same pot and water. The potatoes took about 30/40 minutes. (cooked whole, skins on)  I added the eggs in toward the end and cooked them for about 11/15 minutes in the rapidly simmering water I served my potato salad with a side of BBQ ribs, yum… bunny… yum!  Ingredients… 10 cooked red potatoes (skin on), chopped large  3 Tablespoons pimiento, chopped 2 hard boiled eggs, peeled and chopped  1 celery stalk, chopped 6-8 cocktail onions, minced 2 pickle spears, chopped 1 tsp salt 1/4 tsp garlic powder 1/4 tsp season salt  1/2 cup mayonnaise  Process… Combine all ingredients  Chill the salad for at least …
