Green Chile Raja Stew 

So I got to thinking, what to make with the several green chiles I roasted yesterday… I thought why not make a stew in the style of the Spanish dish Rajas but without any creaminess to it… Green Chile Stew it is! 

Slice up the chiles (Anaheim and Pasilla), I sliced mine Rajas style, in strips. 

I used a whole onion sliced Rajas style too.

3 garlic cloves chopped small

Sweat the onions

Add in garlic, next… 1 can of petite diced tomatoes and the chiles. 


I used beef and chicken broth, 8 cups for 6 chiles. I seasoned the stew with comino, majoran, oregano, a bit of lemon juice, s & p. 

Combine all. 

Simmer the mixture for 30 minutes. 

This is a good tasting stew, top it with fresh cilantro, shredded cheese, more lemon juice, hot sauce (the soup is a little spicy all ready so taste test first) and maybe even chicharones (pork rinds) or crushed tortilla chips for added yummy flavor and crunch.

* This would be great with the addition of shredded deli roasted chicken.
